Introducing Chimayo Street Grill to South Lake Tahoe! We took old school traditional family recipes from the heart of Mexico and added the best of Southern smoked barbecue for a “fusion” that will explode with taste. Don’t expect the usual, boring Tex-Mex found so often in the United States, but rather, a dynamic presentation of distinct homemade, fresh “farm to plate” natural foods, featuring slow smoked and grilled meats topped with your choice of sauces and aioli’s constantly rotated for a different pleasure sensation every time you visit. Too often, American diners seeking Mexican food are limited to the somewhat boring Tex-Mex cuisine of the border area. Chimayo went much further in their quest for real Mexican cooking. Leaning on our Hispanic partner, Susana Ornelas, we traveled deep into the heartland of Mexico to discover the natural food and preparation found in family cooking throughout this amazing country! Then we merged it with the best of traditional, slow cooked Southern barbecue for a “fusion” that will delight your palette! There is a real synergy from taking the time to smoke and grill the best cuts of meat at a low temperature for a long time, letting the meat retain its natural moisture while the tasty, chewy “bark” forms on the outside of the cut. Chimayo Street Grill allows you to choose your meal from options like Smokey Pulled Pork, Grilled Chicken, Carne Asada, Sliced Brisket and “Burnt Ends.” Add to your flavor experience using any combination of the many sauces and aioli’s featured each day. Selections like Cherry Explosion, traditional Carolina and Kansas City BBQ flavors, Smokey Peach, a classic Coarse Mustard blend and aioli’s made from whatever is fresh from local farmers, and you will discover what Mexican Fusion has brought to Tahoe.
