At Hill's there is no ocean in the world too far. We will gladly bring in any variety of oysters from the East Coast, West Coast, Canada or even Japan! Please order any species you wish in the beginning of the week and we will gladly have them fresh for you by the weekend. Below is just a sample of the many varieties available to us fresh based on the season.
Long Island Blue PointLong island sound, ct, these large and deep cupped oysters are the standard at hill's. Very meaty and slightly salty, these oysters are the ideal starting point for those new to oysters
Quonset PointNarragansett bay, Rhode island, distinctly managed shapes and deeply cupped meats make these Rhode island's favorite oyster. The taste is quickly salt yet finishes subtly sweet
WellfleetWellfleet, Massachusetts, recognized for their quality for over 100 years, these oysters are enjoyed for their cold water mineral flavor
BelonSunshine coast, British columbia, very firm in texture, slightly salty with a distinctive mineral like finish. Available through winter
OlympiaShelton, washington state, this extremely small oyster (around the size of a 50 cent piece), is harvested by hand in the pristine washington coast waters. This bite sized smoky flavored oyster is a treat for those not used to a west coast oyster. Available November through late spring
MalpequePrince edward island, canada, this small choice oyster is the heart of the P.E.I. legacy with a wonderful taste that needs to be experienced! They have the distinct taste of the island with just the right amount of salt.
Shellfish on the Half
With over 50 varieties of oysters and clams available, Hill's is the Delaware Valley's leader in shellfish selection. For a nominal fee we offer any of our oysters, top neck or cherry stone clams either freshly shucked in the juice or on the half shell. Contact your local Hill's for pricing and availability on all of your raw bar needs.
All of our trays are made completely from scratch. Below are just a few of the options that are available, but we can mix and match any combination that you can come up with
Poached Salmon - Our Signature TrayWhole fresh salmon; boned, poached and covered with fresh cucumber slices. Displayed on a bed of greens and surrounded by fresh bell peppers, cherry tomatoes, black olives, and served with our homemade sour cream and cucumber dill dressing
Cocktail ShrimpPeeled and deveined cocktail shrimp displayed on a bed of greens with cocktail sauce and lemon wedges. Our trays start at 2 pounds each and can hold as much as your party needs
Cocktail Shrimp and Cocktail Crab ClawsPeeled and deveined cocktail shrimp and cocktail crab claws displayed on a bed of greens with cocktail sauce, hot mustard and lemon wedges
Smoked FishCustom made to your specifications with our locally made sugartown smoked specialties products. All served on a bed of greens with capers, finely shopped eggs, onions, cream cheese and hot mustard sauce.

Please give 48 hours notice for poached salmon and smoked fish trays. 24 Hours for all shrimp and crab trays. All trays are completely customizable depending on your needs! Call your local hill's for assistance.
